Wine Cellar
The fundamental principle underlying production at the estate is respect for the grapes and their inherent characteristics. The work that has begun in the vineyards continues in the winery, where the winemakers operate solely with the quality of the grapes and the wine in mind.
The first building of the modern and efficient winery, designed and constructed in 1988 – right in the midst of the vineyards so as to allow for consignment of the grapes that is as ergonomic and rapid as possible – formed part of a project to recuperate the prestige and appeal of Piedmontese wines. In subsequent phases, it has been enlarged several times, thanks to the Zonins’ long-term investment in the estate. This process was completed in 2011 with buildings fitted out with state-of-the-art equipment that provides delicacy throughout the winemaking process: crushers that rotate very slowly to destalk the grapes and gentle presses designed to extract only the noblest parts of the berries, with maximum respect for the fruit and aimed at obtaining wines of absolute quality with the exclusive imprint of their terroir.
Particular attention has been paid to the production of the sweet sparkling wines, represented by the Asti D.O.C.G. and the Brachetto D.O.C: the free-run juice obtained from the pressing is clarified, immediately refrigerated and then undergoes temperature-controlled fermentation so as to transfer into the bottle all of the precious treasury of aromas that nature has locked up in the grapes. In the subsequent phase of the prise de mousse, the preparation of the “cuvée” is of fundamental importance: the skilful blending of wines originating from the estate’s various vineyards in order to obtain the most well-balanced and satisfying taste possible.
